Classic Potato Salad

Makes 3 pints of potato salad.

 

Ingredients

2        -        -                  Large Baking Potatoes

7        -        -                  Eggs (Boiled Hard)

  1        -        Cup             Celery (Finely Chopped)

  1        -        Bunch         Green Onions (Finely Sliced)

  1/3     -        Tsp             Large Radish (Minced)

  10      -        -                  Dill Pickle Slices (Chopped)

  -------------------------------------------------------------------

  1/3     -        Cup            Dijon Mustard

  1/2     -        Cup            Mayonaise

  1/4     -        Cup            Dill Pickle Juice

  -        -        -                  Salt (to Taste)

  -        -        -                  Pepper (to Taste)

  Potato Preparation

1.    Clean and boil potatoes (with skins on for flavor) until done.

2.    Boil eggs until done.

3.    Allow potatoes and eggs to cool overnight.

4.    Skin potatoes.

5.    Cut into 1/2 “ cubes.

6.    Peel and cube eggs into 1/4 inch pieces .

7.    Mix in celery, green onions, radish, and pickle slices.

 

Liquid Ingedient Preparation

6.    Dijon mustard, mayonnaise, and pickle juice in a bowl.

7.    Add liquid blend to the potato and vegetables.

8.    Turn several times to mix

9.    Add salt and pepper to taste.

10. Refrigerate for at least an hour.

11. Serve.
